Mustard greens are a type of green leafy vegetable prepared from mustard leaves. Punjabi dish is made mostly in winter. It is said that its intake gives heat to the body and helps in the fight against cold. The treasure of essential nutrients is hidden in the leaves of greens. Iron is found in mustard leaves in addition to top class anti-oxidants and essential micronutrients.

Ingredients for mustard greens

250 grams mustard leaves
125 gm Bathua Leaves
125 grams Spinach Leaves
240 gm fenugreek leaves
200 grams onion
50 grams ginger
20 grams Green Chillies
20 grams of garlic
5 grams red chili powder
1000ml water
50 grams of maize flour
Salt to taste

Method of making

Clean and cut all green leaves and clean them again for dirt in running water. Drop water on green leaves 3-4 times. After that, mix all the ingredients except the maize flour in the pressure cooker and cook it for 8-10 minutes. Pour greens with stock and corn flour in a blender and mix for a minute. Put the mixed greens in a bowl.

Now, add green leaves in a pan and boil for 20-25 minutes. Heat the oil or ghee in another pan, add chopped onions and fry them till they turn brown. After that include the prepared greens and fry for a few minutes in hot oil or ghee. Now, you can eat prepared Punjabi dish with corn bread, radish, amla pickle and jaggery.
